From the Moosewood Cookbook by Mollie Katzen As is the recipe below is easy, tasty and refreshing. There is room for a lot of substitutions and experimentation. Don’t have tarragon? Try some dill or lemon balm. Can’t find a white onion? Try a red one or just extra scallions. Feel free to add other vegetables as well –fresh corn, diced celery, or whatever you think would taste good!
Ingredients
  • 4 cups tomato juice
  • ½ cup minced onion
  • 2 scallions, minced
  • 1 garlic clove, minced
  • 1 bell pepper, minced
  • 1 cucumber, peeled, seeded, and minced
  • 2 cups freshly diced tomatoes
  • 1 tsp tarragon
  • 1 tsp basil
  • ¼ cup freshly minced parsley
  • Juice of a ½ lemon
  • 2 tbsp. wine vinegar
  • 2-3 tbsp. olive oil
  • ½ tsp. cumin
  • 1 tsp. honey (optional)
Instructions
  1. Combine all ingredients, chill until cold. You can also puree some or all of the soup.
