Roasted Cauliflower
- 1 head cauliflower cut into 1½-inch-wide florets
- 2 tablespoons extra-virgin olive oil
- Salt
- Preheat oven to 450°F.
- Toss cauliflower with oil and salt, spread in one layer in a large baking pan and roast, stirring and turning over occasionally, until tender and golden brown, which will take about 25 to 35 minutes.
- Serve as-is or use in another recipe, as a salad topping, etc. – the possibilities are endless!
