MADE IT FROM THE MARKET: Baked Acorn Squash

We are continuing the new feature of the Newsletter to encourage customers to share their experiences with products purchased at the market. These can be dishes, beverages or meals, uses of items like wools, soaps or lotions or perhaps even combinations of these such as a dinner complete with flowers and candles.When their submission is published, customers will receive a $10.00 OFM Gift Card to purchase items from one of our wonderful vendors. Here is a meal prepared from products purchased at the market by our market attendee Marcie Levin:

This recipe uses an acorn squash from Red Barn Produce. Cut the squash in half, scoop out and discard the seeds and any stringy parts, turn the halves upside down, and bake in a dish or pan (on parchment or aluminum foil for easy clean up) at 350 degrees for about 45 minutes or until soft when gently pressed. You can also bake right side up, but cover loosely with aluminum foil to keep moist. When done baking, you can leave it plain, or season it as you like (butter, salt and pepper; butter, brown sugar and cinnamon; etc), then just scoop and enjoy!
