Healthy Cornbread

Ingredients
  • 1 cup unbleached flour
  • 1 cup cornmeal (stone ground preferred!)
  • ¼ cup white sugar
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup non-fat vanilla yogurt
  • 2 eggs, beaten
  • ¼ cup honey
  • ¼ package of cooked kernel corn (optional)
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Lightly grease an 8x8 inch baking pan.
  3. In a large bowl, mix flour, cornmeal, sugar, soda and salt. Stir in eggs, yogurt, honey, and cooked kernel corn. Do not over mix: stir only until well blended.
  4. Pour batter into prepared pan.
  5. Bake in preheated oven for 20 to 25 minutes, or until center of the bread springs back when gently pressed.
  6. Makes 9-12 servings, depending on how large you prefer to cut your corn bread pieces.
  7. Serve with Lentils and Greens.
