Gazpacho

From the Moosewood Cookbook by Mollie Katzen As is the recipe below is easy, tasty and refreshing. There is room for a lot of substitutions and experimentation. Don’t have tarragon? Try some dill or lemon balm. Can’t find a white onion? Try a red one or just extra scallions. Feel free to add other vegetables as well –fresh corn, diced celery, or whatever you think would taste good!
Ingredients
- 4 cups tomato juice
- ½ cup minced onion
- 2 scallions, minced
- 1 garlic clove, minced
- 1 bell pepper, minced
- 1 cucumber, peeled, seeded, and minced
- 2 cups freshly diced tomatoes
- 1 tsp tarragon
- 1 tsp basil
- ¼ cup freshly minced parsley
- Juice of a ½ lemon
- 2 tbsp. wine vinegar
- 2-3 tbsp. olive oil
- ½ tsp. cumin
- 1 tsp. honey (optional)
Instructions
- Combine all ingredients, chill until cold. You can also puree some or all of the soup.
