Before being diagnosed with Celiac Disease, Flakely founder & Executive Pastry Chef, Chef Lilia Colello worked for Wolfgang Puck, The Food Network, and in some of the country’s best restaurants. Unable to work with flour, and unwilling to live without croissants, she made it her mission to create French pastries that are “taste-identical” the their wheat- flour counter parts. Chef Lila works tirelessly to create her own versions of pastries and breads that gluten-free foodies miss the most.
