Roasted Cauliflower

One of the simplest and easiest ways to cook cauliflower is to roast it in a hot oven. Cauliflower, especially really fresh cauliflower such as that available at the market, becomes almost like candy when roasted because the high temperature concentrates the sugars. Best of all, this process gives you the raw material for soups, salads, and even vegetable casseroles…and it’s so easy!
Ingredients
  • 1 head cauliflower cut into 1½-inch-wide florets
  • 2 tablespoons extra-virgin olive oil
  • Salt
Instructions
  1. Preheat oven to 450°F.
  2. Toss cauliflower with oil and salt, spread in one layer in a large baking pan and roast, stirring and turning over occasionally, until tender and golden brown, which will take about 25 to 35 minutes.
  3. Serve as-is or use in another recipe, as a salad topping, etc. – the possibilities are endless!
